Baked Chicken and Dumplings

I found this recipe on another blog, but sadly I lost the address for it, so I can't give the proper credit to this recipe. I love making chicken and dumplings, however I hate standing over the pot with all of the steam. This was a perfect solution to the problem. The gravy was also much creamier which gave it a taste similar to chicken pot pie. So next time you have a cold winter afternoon, whip this together and it will warm you up for sure!



Baked chicken and dumplings

Chicken:

3 c. cooked chicken, cut into large pieces

½ c. butter

1/3 c. flour

½ tsp salt

1/8 tsp pepper

3 c. chicken broth

1 can cream of chicken soup

 

Dumplings:

2 c. flour

3 tsp baking powder

½ tsp salt

1 tsp poultry seasoning

¼ c. oil

1 c. milk

 

Blend butter, flour, salt and pepper in saucepan. Add chicken broth and cook until thick. Stir in cream of chicken soup and add cooked chicken. Put in a 9x13 pan. To prepare dumplings, mix all ingredients together and stir until moistened. Drop rounded spoonfuls onto chicken and gravy. Bake at 425° for 20-25 minutes.

 

Dipped Lemon Spritz Cookies

For Thanksgiving this year I decided to bring Dipped Lemon Spritz Cookies because both my mom and grandma love lemon desserts.

This recipe came from Taste of Home magazine. Overall the recipe was very simple and fun to make. Next time I would probably use lemon extract rather than vanilla extract to try to step up the lemon flavor in the cookie. The simple lemon flavor was a great compliment after all of the wonderful flavors from our Thanksgiving meal.

Julie and Julia

My wonderful mom and I went out to the movies tonight to see Julie and Julia. If you haven't seen it yet, go see it soon! It was such a sweet and inspiring movie. Not only that it also explains a little bit why this world of cooking is so important to us foodies.

Lemon Biscotti

If you ever want a cookie that has a little more sophistication and is sure to impress I suggest trying out some lemon biscotti. When making these cookies if you use a little patience they will come out beautifully. You need to give adequate cooling time between baking and slicing the cookies so that they will not fall apart and will slice cleanly.

Peanut Blossoms

One of the most comforting cookies in the world has to be peanut blossom cookies.. The smell wraps around you like a favorite sweater. The cookies are crisp but still melt in your mouth. One of the best parts is they are so simple to make and still yield great results. If for some odd reason you have yet to try these cookies go make yourself some pronto!

Zucchini Bread!

You may be surprised to learn that I have never made zucchini bread. I was very excited when my grandma picked me up some zucchini from a local farmer. I knew at once I wanted to make bread. I was pleased with how easy it was to make, I didn't even use my Kitchen Aid which does not happen often! Very quickly my house was filled with the wonderful aroma of such a comforting smell. So while you are out at your farmer's market's this summer grab a zucchini and try your hand at making some bread!
